Cheese Classes
Thanks to everyone for helping us grow our class and tastings schedule. We love spreading the curd word! If you haven't been,
we hope you'll join us for what Visit Austin notes as one of the best date nights in Austin - whether you're flying solo, in a couple, or in a pack! Note that each class usually includes a guided tasting of 7 cheeses with food pairings (like jams, pickles, etc) and accouterments of bread, olives, and nuts. For those who don't drink, don't worry! Your ticket price does not include alcohol. Instead, for those who want the option, you can BYOB (for a $4 setup fee per group) or you can purchase our selected wine or beer pairings in the shop prior to the class. Because many of our upcoming classes are sold out, we're adding a last-minute class next week. Can you help us break our record and sell it out? Wed 7/24 (6:30-8:30pm) - Perfect Pairings: Cheeses and Cured Meats Prosciutto, Salami, and Cheese...Oh My! It started as just a fun class on a whim and is now one of our most popular offerings. Learn the difference in large and small format salamis, course and fine ground, as well as whole muscles and the curing process - all while we pair these cured meats with some of our fave cheeses. In The Shop
Looking for one more addition to make your summer picnic board complete? We have just the thing! This week in the Cheese Shop, we're excited to feature Olympia Provisions from Portland, Oregon! Founded in 2009, the team at Olympia creates traditional, handcrafted European-style salumi inspired by founder Elias Cairo's Greek heritage and classic Swiss training. Now a powerhouse of pork in Portland with everything from pâté to pickles, Olympia Provisions has been called the "Best Charcuterie in America" by Bon Appetit and has racked up numerous Good Food Awards for their outstanding salumi. We're proud to carry three salamis from Olympia in our Meat Case: Loukanika, Chorizo Rioja and Finnochiona!
Loukanika is a classic Greek style salami studded with garlic, a hearty helping of cumin. and orange zest. For an all Greek summer feast, the deep citrus and spice of Loukanika are a treat with slices of grilled Bee Tree Farm.Halloumi and a glass of SOFOS, a red blend from Greece's sole certified organic vineyard. Chorizo Rioja is a Spanish style cured chorizo featuring both sweet and smoked paprika, with touches of garlic and oregano. The warming paprika and slight herbaceousness beg for a touch of sweetness, which is expertly provided by Cabra al Gofio, a semi-soft Spanish goat's milk cheese coated in toasted cornmeal.
Finnochiona is a traditional Italian style salami made with the timeless combination of garlic, fennel and black pepper. These classic flavors are perfectly complemented by the deep, grassy richness of Bianco Sardo, a Sardinian sheep's milk cheese, and a bold, tannic sip of Langhe Nebbiolo

Located in a historic East Side drugstore, Hillside Farmacy makes a Mac & Cheese that will certainly leave you feeling better!
Blending Deer Creek cheddar from Wisconsin with the Italian classic Taleggio, it's comfort food at it's best.Gooey, creamy, and with just a bit of bite, you can make it even more amazing by adding pancetta, broccoli, or even a poached egg! Pic by @atx_rox

We love Antonelli's. We love going to classes at the cheese house, stopping in and buying cheese at the shop, and ordering their products at local restaurants. Because we love Antonelli's so much, we wanted them to make our wedding cake. Staff assisted us throughout the process and helped us pick the right cheeses for a tiered wedding style cake made from cheese wheels. John Antonelli made contact with us before the event to ensure that our vision would be met by their services and the day-of team was there to decorate the cake, cut the cake, plate it with pairing for guests, and package leftover cheese in beautiful paper with personalized labels for guests to take home. I highly recommend their services to anyone who wants a unique and delicious wedding cake and cheese experience for their guests. John and I are looking forward to sharing the stage again, this time we'll be doing a deeper dive into lessons learned from our opening - and closing - of our second location last year in downtown Austin. 2018 hurt, and we fell down and felt out. Fri 8/2 (8am-12pm) - Dena Speaks with DJ Cassandra at Antonellis! Join Dena Jansen and Cassie Shankman as they collaborate to create a morning for each attendee to reconnect with themselves and other go-getter women including entrepreneurs or women considering transitions. Both women will bring their unique story to the table and share lessons on the importance of self-reflection, personal and professional growth, and community building and investing. Snacks, drinks and a goodie bag will be provided for every attendee. There will also be a special opportunity for attendees to enjoy a private tour of Antonelli's Cheese Shop.
