All About Molds Class

Cheese 201 - THIS WED
Can I eat the rind? What kind of mold is good mold (versus bad mold)? How do I know if this mold is supposed to be here or not? Well, you can find out! Come dive deep into the world of mold with us as we unpack the biochemistry of cheese molds. Of course, we can’t do it alone. So we’ve invited back food scientist Pat Polowsky (of CheeseScience.Org) to lead this self-proclaimed cheese-geek discussion. Get tickets and more info here. Deadline to get tix is midnight Tuesday!
Note: While it’s not required, we recommend taking our Cheese 101 class before this Cheese 201. Lucky you, we have a Cheese 101 this Tuesday (tomorrow). Get tix here!

“Pat is indeed awesome. And charming, engaging, funny, and packed with knowledge… Thank y’all for arranging this! We’ve already signed up for the next one.” - Matthew R.
“My favorite part was pretty much anything coming out of Pat’s mouth. Educational and a riot.” - @surf3rcalavera

New Shop Swag
Well, after our Instagram account got hacked last week (YES! And it was horrible! But we’re back in control now thanks to Jeff and his team!), we posted an appreciation giveaway of our new “Cheese is Magic” unicorn shirts - and it turns out, y’all love them as much as we do. Available in green adult and limited youth sizes, they are currently for sale at our Austin shop for curbside pickup (under “accessories”). (Funny story: We got these made for our daughter Elia. When she saw them, she responded, “Well, I’m into dragons now.” … so expect a dragon shirt in the future!)

This is also our first time to unveil our new “Soul Cheese” shirts, available in teal adult sizes. While we can’t all be at the beach and miss vacations, we channeled our inner romantic vacay vibes with this shirt of two cheeses holding hands, walking on a beach under the palm trees and seagulls, with the caption: “I met my Soul Cheese at Antonellis.”
Our warehouse is at capacity for the holiday season, but we’ll be listing shirts on our shipping site soon to be shipped starting in January.

Gift Ideas Under $15
Nuts & Dried Fruit Okay, it might seem old school, but I grew up with pecans and apples in my stocking. A fun, updated play on that - with maybe a hint more “I tried” are our selection of dried fruits and nuts. Our mini-tubs of Caramelized Pecans, Marcona Almonds, Piedras de Luna (Chocolate Covered Cashews) and Spanish Quicos Corn Nuts are all regular customer faves and top sellers. These make for perfect stocking stuffers, a daily Hanukkah gift, or just a small appreciation gift this holiday season. And our Dried Persimmons come in a cute perfect package as a delicious edible bite.

Sheena’s Pickles She’s back baby! We came across Sheena’s Pickles about 7 years ago when we did a workshop series with local entrepreneur Sheena Moore. She put the biz on halt for a while. When we reached back out to her this past summer, she was ready to get back in the game professionally - and girl are we better for it?! (Honestly, my daughter Elia craves her Spicy Dill Pickles!) For an under $15 treat, try her Dill Pickled Cucumbers and Pickled Red Beets. (We also have larger jars of other selections, including the Spicy Pickles, and Pickled Okra. Also check out her BRAND NEW Brandied Pears!)

Chocolates, Honeys, & Jams
Have we mentioned how proud we are of our chocolate selection? Ever tried the chunk honey from local badass beekeeper Tara Chapman of Two Hives Honey? And have you seen our expanded selection of jams, spreads, and preserves? All make for perfect food-focused gifts.

Shipping Deadline
There are ONLY SIX shipping days left in our holiday season. We ship weekly on Mondays, Tuesdays, and Wednesdays via two-day UPS. Our last scheduled shipping date, to do our best to ensure arrival before the Christmas holiday, is planned for Mon 12/21. So if you want to send a gift through us in the coming weeks, your deadline is asap. We’re also almost completely booked on capacity and will be turning off orders soon. So get yours in. Check out our Shipping Policies and Details here or place your shipping order here.

Good Libations
In the Shop: This week we’re featuring an amazing wine from the folks at Ovum Wines in Central Oregon. Ovum’s focus is on minimal intervention, letting the fruit shine and staying out of the way, allowing for an authentic expression of their Riesling, Gewurztraminer and Muscat. We’ve carried Ovum’s incredible white wines for a few years, and are continually amazed by their vibrancy and complexity. Recently, we snagged some of their 2018 Memorista Riesling, a limited run of bottles from volcanic soil grown grapes, aged to balance its “razor like acidity” with it’s delicate, floral aromas. (pic cred @hushxpuppie)
Riesling often gets a bad rap for being sweet and overly aromatic, but Ovum’s Memorista is not Oma’s saccharine sipper. Reminiscent of a brisk morning and sea breeze from the Oregon coast, The 2018 Memorista received 92 points from Wine Enthusiast, and was lauded for it’s hair-raising acidity and citrusy, “crunchy” character. Crisp and dry, the Memorista shines with notes of Meyer lemon, green apple and ephemeral white flower. That cutting acidity makes for an apt cheese pairing now, but also means the Memorista is a prime candidate for aging, where that sharpness will continue to mellow out until you decide to indulge. -from David Rhodes, beverage purchaser.

Holiday Resources
Gifting
Our gifts start at $35, we offer special bulk gifting options, and by far the most requested item and our best “experience” is the “Cheese Class in a Box” for $125. We offer FREE SHIPPING in Texas for any gifts over $75 (pretax). Otherwise, shipping is $20 in Texas and $40 outside of Texas anywhere in the continental USA. Another annual fave is our Monthly Cheese Club, available in 3, 6, or 12 month subscriptions.

Cheese Trays We’ve been creating artisan cheese trays for a decade now. What makes our boards a little different? We craft our trays in our health-inspected kitchen. All items on our trays are made by folks we know and love (ie no bulk, industrially-sourced cheeses from big box stores). We always build our trays the morning they are enjoyed (ie no pre-cut pieces). Sometimes, that means our team shows up at 4am, just to make sure your cheese tastes the best it can. Our trays first and foremost feature the best cheese and meat we can source. Want in on the action? Check out all our cheese tray options here.

NEW!
We also have these individual SNACK PACKS ($15) for a minimum of 10 orders. Want to treat the team or book club to a little happy hour? These are perfect. Note that we make them fresh daily just for your order, so we need advance notice.

Ready or Not 2021
I know many of us are honestly just marking off calendar days, ready to say an official goodbye to 2020. I’m not sure what I even personally accomplished in 2020! I mean, we got a lot done in the biz - thanks to you! - but personally? I think it was just about surviving everything being thrown at us. But I’m ready to be purposeful again. And I know I need to create some space to plan what that looks like. So I’ve signed up for the Ready or Not (RON) Virtual Conference the week of Jan 6-13. It’s a self-paced access to over a dozen talks created just for this audience with a workbook, coaching, tips, and - most importantly - inspiration to get you hyped up and ready for your best year yet. Read more about RON2021 and discover the speakers here. Want to join us? Here’s my code for 20% off the $99 price: RONFRIENDS&FAM. (And if you sign up before Dec 16, there’s some great swag included too.)
