Texas Hill Country at the Trail’s End Ranch under Ashly Martin’s care. Martin is a third-generation rancher in Comfort, Texas, and as far as we know, this is the only herd like it in the United States. In fact, Spain didn’t allow for the export of their prized Iberico hogs until 2002! From Texas Iberico: “These extraordinary pigs trace their lineage back to the time of the cavemen and are particularly suited for outdoor living. The cerdo Ibérico (Iberian pig) has a different genetic makeup than industrial pigs. These animals transform their diet – acorns, fresh grass, mesquite beans and prickly pear fruit – into heart-healthy fats much like extra virgin olive oil.


That’s how Iberico pigs got the nickname ‘four-legged olive trees.’ Breeding stock was flown in from Spain in 2013 and our herd has 6 different strains of Iberico, providing vigorous genetic variation and a healthy herd.” Here in Texas, these pasture-raised pigs are never given antibiotics and the Texas Iberico cured meat offerings are Animal Welfare Approved. The pigs “spend their days roaming freely. Their diet infuses the pork with intense flavor, and plentiful exercise means the pork is marbled with flavorful fat, perfect for making delicious cured meats.” Without further ado, here are the products you can now find in our retail case and warehouse - available for curbside pickup or nationwide shipping.

Spread The Love! That's our theme for this year's birthday celebration. You've been good to us, and kept us going during tough times, and we want to pay it forward. Traditionally, to thank our customers and partners, we host #FreeCheeseWeek and give out free cheese plates at restaurants around town. However, life is different these days. And our service industry friends are hurting. So we're turning Free Cheese Week on its head; and yes, it still involves FREE cheese! We hope you'll join us in celebrating our birthday with one or all of the ways below.

Starting Mon 2/1, we'll be spotlighting 3 different Texas makers daily on our Instagram and Facebook pages. While the trio of products makes for a perfect treat, we also hope you'll support those makers and follow them in their journeys. You'll be able to purchase the paired trio or items individually. As part of a newly-envisioned pandemic-era #FreeCheeseWeek, we'll be hosting a DAILY GIVEAWAY of these Texas goods for 11 straight days! Follow us on Instagram to play along and learn about 33 Texas makers; no purchase necessary. As for paying it forward, we'll spotlight a different nonprofit every day and donate 5% of shop revenue to them.
We're spreading the love another way too. We're still giving restaurants free cheese. And we'll be featuring a daily dish from an Austin restaurant. But here's the thing. We aren't asking them to give the cheese away. We're asking them to sell it. And our hope is that you'll buy that dish - or ANY dish - from our restaurant partners. This package includes a round cheese and charcuterie tray featuring two cheeses, one cured meat, fresh and dried fruit, pickled treats, and jam. On the side, you’ll also get chocolate covered cashews, SRSLY Love chocolate bar, flatbread crackers, and a bottle of Prosecco. Book a Raclette Experience
A quarter wheel of raclette cheese, a machine to melt it, and all the fixins (cured meats, potatoes, an assortment of pickled goods, salad, and bread) that feeds up to 6 folks. This is a fun, interactive dining experience and oh-so-decadent. We have 4 machines to rent out daily, and you must return it before noon the following day (so we can spread the love!). In Alex Lobrano’s article on “Five Cheeses that will Transport you to France,” he named 5 domestic cheese shops here in the USA to get your cheese game on. Austin is part of a statewide movement to create more family friendly work places and this week #EarlyMattersGreaterAustin launched Best Place for Working Parents™ in partnership with other chapters across the state. This first-of-its-kind business self-assessment promotes research-backed policies that benefit working parents and businesses’ bottom line. We recently took the self-assessment. While we personally think we've got a ways to go to become more parenting friendly (it's on the goal list!), we're also proud to be counted as one of Austin’s #BestPlace4WorkingParents™ businesses in the food & bev industry - who are leading the way in supporting employees, specifically working parents, through family-friendly workplace policies and practices.
