Behind the Scenes with Texas Iberico - Virtual Charcuterie Tasting
Thu 4/29 - Hey pork lovers! Hey Spain lovers! Hey locavore lovers! This Thursday, we’re offering a one-of-a-kind virtual tasting experience of the only herd of Iberico hogs in the United States - and one of the few outside of Spain itself. Prized for the taste and quality of their meat and fat, attributed to their time roaming pastures and foraging for acorns, the Iberico hog is an ancient breed with origins that date back millennia and in fact have been captured in caveman-decorated caves in Spain. While you’re learning about this famous and prized breed, you’ll also hear the challenging startup story of Texas rancher Ashly Martin and business partner Tim Harris, who cofounded Texas Iberico. That’s right, we have Iberico ham that comes right from the heart of Texas - and you get to taste it, as well as their fuet hard stick salami, their chorizo salami, and their award-winning prickly-pear lomo. In addition to the four meats, you’ll get four pairings, as well as bread and Spanish quicos corn nuts. If you’ve attended one of our “Behind the Scenes” virtual events before, you’ll know we intentionally don’t polish up these videos. Instead, the combination of recorded and live videos is a gritty representation of experiencing the farm itself, as if you were standing there talking to the maker.
