Behind the Scenes with Texas Iberico - Virtual Charcuterie Tasting
Thu 4/29 - Hey pork lovers! Hey Spain lovers! Hey locavore lovers! This Thursday, we’re offering a one-of-a-kind virtual tasting experience of the only herd of Iberico hogs in the United States - and one of the few outside of Spain itself. Prized for the taste and quality of their meat and fat, attributed to their time roaming pastures and foraging for acorns, the Iberico hog is an ancient breed with origins that date back millennia and in fact have been captured in caveman-decorated caves in Spain. While you’re learning about this famous and prized breed, you’ll also hear the challenging startup story of Texas rancher Ashly Martin and business partner Tim Harris, who cofounded Texas Iberico. That’s right, we have Iberico ham that comes right from the heart of Texas - and you get to taste it, as well as their fuet hard stick salami, their chorizo salami, and their award-winning prickly-pear lomo. In addition to the four meats, you’ll get four pairings, as well as bread and Spanish quicos corn nuts. If you’ve attended one of our “Behind the Scenes” virtual events before, you’ll know we intentionally don’t polish up these videos. Instead, the combination of recorded and live videos is a gritty representation of experiencing the farm itself, as if you were standing there talking to the maker. Shipping purchases: You can also order this tasting kit for shipping, noting that we will provide the recorded video tasting to you. Then it’s an on-demand experience and you taste and watch when it’s convenient for you! Orders for shipping must be placed by this Sunday and will go out next Mon 5/3.

I know these days can feel over-commercialized, in addition to being exclusive (for those who’ve lost mothers or lost children, never experienced “traditional” mothers, or encounter challenges becoming mothers). For us, it’s a time to pause and give special thanks to all the mother figures, caregivers, and leading ladies in our lives. Personally, my mama spent the last week caring for me and my family while I recovered from (non life-threatening) surgery. To all the sounding board, advice-giving, nurturing, confidence-boosting, cheerleading, tough talking mama figures out there, we appreciate you.

Virtual Bubbles & Cheese Brunch for Mother's Day
As you’ve heard before, bubbles are our favorite pairing for cheese. The effervescence just picks those delicious, palate-coating cheeses off your tongue, aerates and accentuates the pairing, and leaves your mouth fresh and wanting to dive back in for more. In this virtual event, you’ll get a cheese and food pairings tasting plate, a bottle of white sparkling wine, a bottle of Lambrusco sparkling red, and locally-made Rambler sparkling water. Remember this is for curbside pickup or local delivery only. Note: The first ticket ($70) includes a plate, Rambler water, and two full bottles (750mL of wine). Each consecutive ticket in your group ($40) simply includes the plate of cheese and food pairings and Rambler, since you can share the wine. Charitable Cheese Cause Day - Today!
Purchase anything from our site today (even for future pickup), and we’ll pay it forward by donating 5% of all proceeds today to local nonprofit Multicultural Refugee Coalition, on a mission to create livelihood opportunities for refugees. Two of those programs include: (1) Open Arms Studio is a textile manufacturer offering advanced sewing training and employing refugees in Austin, Texas, at a fair-wage. (2) New Leaf Agriculture is a nonprofit social enterprise of MRC to support refugee families through a community garden plot in Austin and commercial farm in nearby Elgin. The New Leaf Farm employs organic and sustainable practices while training refugee farmers for paid agricultural work that is dignified, in-demand and familiar from their countries of origin. Check out our Cheese Class in a Box, available for nationwide shipping in the continental USA. Each box has enough goodies to feed up to 4 folks (or leftovers for 1 person!), comes with a 10-min plating video, and an hour-long guided tasting led by John and me (Kendall).
