Savory or Sweet Cheese Pairings?
Gratitude for a Fresh Perspective
Today, I write to you from a friend’s porch in Florida, overlooking an inlet of water. Iguanas climb palm tree trunks nearby as boats tied to docks sway gently with the flow of water and the sun’s reflection glitters and dances along the surface. It feels like our first real vacation in 400+ days, and while our family still has some covid-19 concerns about traveling with our kiddos, I sit here full of gratitude. While I’m aware of the privilege and fortune I have, I admit that boarding an airplane two days ago felt like a whole new experience - despite being a “platinum” flyer by the age of 5. Honestly y’all, I took photos of the kids going down the gangway like an over zealous, first-time flyer. And I was just fine with it! After all, it did feel new. And I just felt grateful. Sure, we had horrible seats in the last boarding group with a connecting flight at an airport out of the way to our final destination. And in my old travel days, I would have been slightly annoyed by it all. (I mentioned the privileged part, right?!) And yet, I loved every second of it. And when I felt a tinge of frustration that I couldn’t have my customary flight drink (signaling to my body to just drop my shoulders and ease into vacation), I intentionally reminded myself of what life had been like the past 400+ days…. And to that end, what life is still like for so many out there. So I won’t rub it in anymore. After all, my view is 110% perfect. (There’s construction across the canal. Haha.) But my promise to you is to be dang grateful for every moment of respite, of travel, of hugging a friend I haven’t seen in so long, of hearing my children laugh/run/play with other kids, of getting flagged in security airport lines, of long restaurant lines… I will be and I am grateful, for this fresh perspective on life.
It’s Charitable Cheese Cause Day!
Today, 5% of all shop purchases go to benefit local nonprofit Latinitas, on a mission to empower all girls through media and technology. Or, buy tickets to our Mon 5/31 “Soft Cheeses: Rich, Gooey, Delicious” virtual tasting, and we’ll donate a portion of those proceeds too. A bit more about them: “Latinas are underestimated and underrepresented. It’s time for Latinas to know that they are important; they deserve to see their experiences reflected honestly and accurately. [We focus on youth because] 1 out of every 7 Latina teens attempts suicide. Hispanic girls lead girls nationwide in the rate of suicide attempts. Through after-school clubs, camps, events and publications, and channels, we provide a space, both in the physical and online, for girls to express themselves, develop their skills, learn about their culture and discover their unique voice. ” Learn more about Latinitas here.
In Person Tastings
Thu, June 24 (6:30-8pm) - Taste Off: Savory versus Sweet AT Easy Tiger SOUTH Join us outdoors, in person at Easy Tiger South for a tasting of 8 (yes 8!) cheeses in a Taste Off: Savory versus Sweet challenge as we pitch 4 sweet pairings against 4 savory pairings and you get to be the ultimate food judge. We’ll talk through the theory of pairing - that is, marrying complementary contrasting flavors (sweet honey with salty cheese) or similar flavor profiles (savory, nutty cheese with a similar spread). You decide which is the best and help us determine in real time. Get tix here. (And if in person isn’t right for you yet, see our continued virtual class offerings listed below or take our Cheese Class in a Box, an on-demand tasting experience.
In Your Words
We have been customers for years. We have attended many classes in person (pre-Covid) and online. The quality of their products is like nothing else in Austin. They share a passion to help teach their customers about their suppliers. I wouldn’t know anything about cheese production if it weren’t for the Antonellis!!! We use the Raclette at home night for special occasions like birthdays/holidays and gatherings. I’ve ordered for local pick up and shipped with them. Service is excellent. Cheese is amazing. Everything they carry is woah. Fascinating place. - Trish H. via Google reviews.
