The Brabander is aged at Fromagerie L'Amuse by Affineur Betty Koster, who ages her goudas at warmer ambient temperatures than would generally be used (about 54°F). This develops a fuller flavor and more dense paste. The cheese is cooperatively made in the Brabant region of Holland, and made exclusively from the milk of Saanen goats. The cheese is covered in a white wax rind to represent the color of goat's milk cheese inside the wax.
Flavors of hazelnuts and buttered sourdough bread dominate and cut ever so slightly with a hint of lemon rind. Pair with caramel, fruit and brightly flavored jellies for delightful treat!
