Sid Cook, the cheesemaker at Carr Valley Cheese, is a fourth-generation master cheesemaker. Named after Sid's daughter, the Cave-Aged Marisa is a 100% sheep's milk cheese that is open-air aged for three months. The lightly earthy paste and patchwork-mold rind are balanced and delicious and would pair well with a Spanish Rioja, Sherry, or any fuller-bodied red.
