Hook's Cheese began to take shape in 1970 when Tony Hook apprenticed at a cheese factory and earned his cheesemakers license. He and his wife (and college sweetheart) Julie began making awesome cheeses, soon drawing attention at cheese competitions. Their blue-cheese cheese caves are set into the hills and are kept at higher temperatures and higher humidity to help the blue mold bloom.
This cheese is the first of its kind in America! The name is a nod to the fact that this unique blue is made with a mixture of cow, goat, and sheep’s milk, giving the cheese an interesting complexity and variety of flavors. Instead of being overly salty, this blue is creamy and a bit sweet with a dense, fudgy texture you’re going to love!
