After inheriting the farm from their father, the Gritti brothers decided to swap out their herd of cows for water buffalo in the early 2000s. Their water buffaloes are pastured but also get to spend time playing in water where their large hooves help them to not sink into the muddy ground. This Taleggio-style cheese is decadently creamy with a tangy, sourdough-like kick that comes from the water buffalo milk.
