Cheesemaker Reggie Jones began his career in quality control but now develops small-batch artisanal cheeses at Central Coast Creamery. Local, hormone-free milk goes into this cheese which is aged 4 months. Central Coast Creamery's cheeses are all small-batch (1000 lbs or less) and made primarily by hand.
Following the success of Goat Gouda, Central Coast Creamery has done it again with this multi-milk cheese. The combination of goat and cow milk gives us a cheese that adds a pleasant, goaty acidity to the sharp, cheddary bite that we all love. Amazingly crumbly, this cheese can go sweet, paired with cajeta or jam, or savory with a mustard!
