Sottocenere is made and aged in the Veneto region by Sergio Moro. Moro gets his milk from a coop of family farms and loves working with wine must and wine barrels in the ageing process as his family is in the Prosecco business!
This delicate, silky smooth cheese is studded with black truffles and rubbed in ash (sottocenere means “under the ashes”) and aromatic ground spices including nutmeg, coriander, cinnamon, licorice, cloves, and fennel. It’s wonderful, aromatic coat balances perfectly with the truffley paste. Gorgeous on a cheese plate or better yet, melted in your favorite Italian dish, this cheese can do no wrong!
