This cheese is the first of its kind in America! The name is a nod to the fact that this unique blue is made with a mixture of cow, goat, and sheep milk, giving the cheese an interesting complexity and variety of flavors - buttery, grassy, and tangy. Instead of being overly salty, this blue is creamy and a bit sweet with a lovely dense, fudgy texture, and was an award winner at the 2019 American Cheese Society!
