Located in Northern Utah, Beehive Cheese Co. founders Tim and Pat, chose to name their cheese company after “The Beehive State.” Beehive thrives on the self-reliance it takes to make their desert “bloom.” Named after local chef John Dearmin, Big John’s Cajun is rubbed with oil and a special, cayenne-based cajun meat rub, developed by the man himself. Allowed to mature in a humidity-controlled facility, Big John’s Cajun has a smooth, creamy texture. This cheese has a kick to it, though, and goes great with charcuterie and beer!
