Visca Charcuteria was born in the spring of 2017 when Eugene Watson left NYC and made his way to Nerac, in Southwest France, to study and work in traditional farmstead charcuterie. He then situated in Catalunya, Spain, to learn the intricacies of Spanish meat curing. In fact, Visca is Catalan for "Viva!" This savory recipe is a Spanish-style chorizo from Wimberley, featuring a smoky heat from Spanish Pimeton, nuance from Guajillo Pepper, and mellowed with supple white wine.
