After graduating from the University of Tennessee in 1976, friends Sue Conley and Peggy Smith took a cross-country "hippie trip,” landing in San Francisco. Inspired by the emerging organic and farm to table movements, they put down roots and began distinguished careers in the Bay area restaurant culture. By the early 1990s, they launched Tomales Bay Foods, a wholesale business to help local farms & dairies get their products into the hands of the Bay Area’s finest chefs. Their headquarters, a renovated hay barn in downtown Point Reyes, featured a small cheesemaking room, and they decided to try their hand at making cheese. A "happy accident" – when making a batch of their flagship Mt. Tam cheese, a few wheels were set aside in brine, and Red Hawk was born! Red Hawk is an organic, small-batch production, triple cream washed rind made with single source organic milk from West Marin County's Bivalve Dairy. Delicately washed with a simple brine for four weeks, developing a glistening sunrise-hued rind. "All Bark and No Bite" -- Despite the pungent aroma, this Triple Cream certified organic cheese is delightfully mild on the palette. Savory and rich, with notes of cured meats, roasted peanuts, and ocean brine behind its pungent funk.
