Mark & Gari Fischer (with daughter Sam) run Woodcock Farm Cheese Company on 45 acres, nestled in the Green Mountain region of Vermont. Timberdoodle is the colloquial name for the bird known as a woodcock, the namesake of this small Vermont creamery. Made with cow milk from nearby Taylor Farm, the flavors result in a buttery and rounded flavor experience. Considered an approachable washed rind, this cheese reliably gives notes of fresh cream and macadamia nuts, with a mild hint of funk.
