Coming from a 4th generation cheesemaker, Mobay is a take on the traditional French cheese, Morbier. Mobay uses goat milk curds for the bottom half of the cheese and is then layered with vegetable ash. After sitting over night, they top the cheese with sheep milk curds and then lightly press the cheese. With beautiful hay-like colors, enjoy the rich flavors of this American version.
