The Full Wheel
Swiss-made Challerhocker, pronounced "holler-hocker," which means "sitting in the cellar” (which is exactly what it does for 10-12 months). Created by Walter Rass, the master cheesemaker at Käserei Tufertschwil in the canton of Saint-Gallen, Switzerland, Challerhocker is a twist on traditional Swiss cheese  – representative of a new generation in innovative Swiss cheesemaking. Originally founded in 1896, Walter’s father, also a cheesemaker, bought the dairy in 1987. After much tinkering with the recipe and aging process, Rass perfected the recipe for Challerhocker, and it was released in 2003 to rave reviews! Made from thermalized (gently warmed) milk, washed in brine & spices, and aged to perfection for a minimum of 10-12 months, it develops a dense & smooth texture. The frequent brine-washing & extended aging period foster complex, nuanced flavors, and a richesse that sets it apart from other Swiss cheeses. Aromas reminiscent of roasting peanuts, caramelized garlic, brown butter and simmering cream invite, with a lingering smooth finish. This savory cheese really is an entire meal in itself!
