Betty Koster has lovingly been exalted by Antonelli’s cheesemongers as “The Dolly Parton of cheesemaking” (because she can do no wrong). Betty breezes through her techniques and “gut feelings” about cheese, making the intricate sound like common sense, but in a nutshell, “My method helps lock moisture in the cheese, resulting in a distinctively dense but creamy, buttery aged Gouda,” says Betty. She and husband Martin keep tabs on production while running their retail shop near Amsterdam, called Fromagerie L’Amuse. Wheels of Brabander, made from pasteurized Saanen goat’s milk, are carefully selected by Betty from their production cooperative in Brabant, Holland. In the Kosters’ warehouse, Betty then matures her goudas at higher humidity levels & temperatures than other gouda producers – up to 60 degrees Fahrenheit. Aging at a higher temp allows crunchy tyrosine crystals to form, while preserving moistness in the fudgy white paste to reveal mellow, sweet notes. The taste is smooth, with long, deep notes of caramel, as well as some classic goat-milk bright notes, and hints of grass and hay. Overall, Brabander resembles creamery fresh sweet cream butter; evoking uncomplicated freshness (in spite of its age).
