With a company name that means “mythic,” it’s no wonder their cheese evokes a deep sense of tradition. In fact, the production of this vibrant recipe predates the Roman conquest of the Mediterranean island of Sardinia more than 2000 years ago. Made from fresh, raw milk from the Sardinian-breed sheep, an adaptable breed that can live in mountainous or lowland terrain, this cheese is aged about 8 months, turning the interior paste a golden color and giving it a deeper, super-rich flavor.
