The Full Wheel
Cabot Clothbound Cheddar comes to us from Cheesemaker Marcel Gravel at Cabot Creamery, a cooperative of 1200 farms, which started making cheddars in 1930. In 2003, Cabot Creamery approached Andy and Mateo Kehler from The Cellars at Jasper Hill to collaborate on aging their selected Cabot Clothbound cheddars. A fruitful partnership, Cabot sends select cheddar wheels to The Cellars at Jasper Hill for 'affinage.’ The young wheels are brushed with lard and wrapped with a layer of cheesecloth. This allows the cheese to breathe, accumulating deep and richly complex flavors over a minimum of 10-15 months. When tasting, perceive butterscotch, sweet roasted nuts, a little grass – and a whiff of horseradish near the rind. This 2006 American Cheese Society Best in Show winner is a staple in our cheese case (whenever we can get it) – not your 'grocery store' Cabot-branded cheddar!
