Name: David ![]() Holiday Cheese Choice: Alpha Tolman from Jasper Hill Describe the cheese: Alpha Tolman is a buttery alpine-style cheese from award-winning cheese maker Jasper Hill in Greensboro, Vermont. This cheese is washed with an herb brine and white wine in the style of an Appenzeller. When young, it's bright, fruity and nutty, and develops deep meaty and caramelized flavors as it matures. Why did you choose it? Alpine styles like Alpha Tolman, Pleasant Ridge Reserve, and L'Etivaz Alpage are some of my favorite cheeses because of their flexibility (pun totally intended). Alpha Tolman is great on sandwiches, in fondue, or with my favorite pairing, Rye on the rocks. What does that cheese pair with? For a savory pairing, I love Alpha Tolman with Speck Americano from La Quercia, Applewood-smoked prosciutto. For those with a sweet tooth, the beefy, savory notes of Alpha Tolman are perfectly contrasted by a summary spoonful of Inna's Blenheim Apricot Jam.
