Breaking into an entire wheel of Parm is a right of passage for every cheesemonger, and today at noon in the Cheese Shop, come watch Cheesemonger Hayley break into her first wheel! You've seen the skilled pros do it on youtube. Watch all the real labor that goes into it with a first-timer. On top of that, you'll get to taste locally-made Cider Noir of Texas Keeper, a cider that's made of Northern Spy apples double fermented with dark Belgian candy, pecans, and orange peel. The is FREE and open to the public. In time to treat you for lunch and get back to work! So come in, watch the action, taste some cheese from the heart of a fresh-cracked wheel, pair it with cider, and call it a day (or go back to work). Hah! Facebook page info here.

Annual Cheese & Beer Benefit

Today will mark our 9th annual Beer & Cheese Pairing benefit for Slow Food Austin, a collaboration hosted at (512) Brewing Co. Not generally open to the public, we bring tables in and sit amongst the tanks, drinking copious amounts of beer, pairing them with some of our favorite (very limited) cheeses, and bolstered by an assortment of charcuterie from local maker Casero and warm bread from Abby Jane Y'all. John and I (Kendall) will personally be leading this tasting, so come out and join us for one of our fave events of the year! While this event normally sells out, there are tickets left. Cheese of the Month Club
Know a cheese aficionado? Or trying to find a gift for the person who has it all? May we humbly put forth the suggestion of a subscription to our monthly CHEESE CLUB - available in 3, 6, and 12-month increments. Prices online include shipping, but we offer discounts for monthly pickups in the shop. Every month's selection includes 3-5 cheeses and varies styles, milk types, and themes to ensure there's always something to be loved. From Taste of Place to One-of-a-Kind, to Meet the Maker, we feature cheeses from across the US, as well as favorite imports. Often, we bring in cheeses especially from hard-to-get folks that aren't regularly offered in this region, nor in our shop. Some selections include a jam or preserves pairing. Holiday Cheese Choice: Alpha Tolman from Jasper Hill
Describe the cheese: Alpha Tolman is a buttery alpine-style cheese from award-winning cheese maker Jasper Hill in Greensboro, Vermont. This cheese is washed with an herb brine and white wine in the style of an Appenzeller. When young, it's bright, fruity and nutty, and develops deep meaty and caramelized flavors as it matures.
Why did you choose it?
Alpine styles like Alpha Tolman, Pleasant Ridge Reserve, and L'Etivaz Alpage are some of my favorite cheeses because of their flexibility (pun totally intended). Alpha Tolman is great on sandwiches, in fondue, or with my favorite pairing, Rye on the rocks.
What does that cheese pair with? For a savory pairing, I love Alpha Tolman with Speck Americano from La Quercia, Applewood-smoked prosciutto. For those with a sweet tooth, the beefy, savory notes of Alpha Tolman are perfectly contrasted by a summary spoonful of Inna's Blenheim Apricot Jam.

Our Cheese Around Town Sat, Dec 14 - Bagel Collaboration! Yes! In honor of Charlie's Birthday Party (yes, the dog behind famed bagel shop Nervous Charlie's), we've teamed up with the bagel pros to bring you a special offering. We're topping a sesame and poppy bagel with Menage cheese (a blend of cow, goat, and sheep milk) and topping it with Cajeta, a goat milk caramel made locally by Blue Heron Farm. They've got a ton of fun party details, so check it all out here.
