It’s Back - Cheese & Gelato Class!
Pictured here is Dolce Neve's Fromage Blanc and Peach Gelato. An annual favorite that many of you missed - and begged for - last year (that we couldn’t figure out how to pull off virtually) was our Cheese & Gelato Class collaboration with Dolce Neve. Well, this annual tradition is back! And since it’s National Ice Cream Month, we’re offering two different chances to get in on the action. Note that both are in-person events at our Cheese House and they sell out quickly. Select your preferred date between 7/20 or 7/27. You’ll get to taste a variety of cheeses “in the buff” and then try them again in gelato from the wizard team of Marco, Francesca, and Leo of Dolce Neve, as well as some fun pairing bites. NEW: Honey & Cheese Tasting Box (On-Demand!)
We’ve become known for our tasting classes, yet friends and family far away were always bummed they couldn’t get in on the experience. Fortunately, we were forced to get creative last year. And thus was born the nation’s (world’s?!) first “Cheese Class in a Box” tasting kit. Send it as a gift or order it for yourself. You’ll receive a thematic box of cheeses and pairings. Eat it straight up or follow our guide to plate it. Then watch the corresponding video to talk you through the tasting. It’s the best of one of our classes, but available to ship nationwide and at your own timing and pace. We switch up the offerings a few times a year, and we’re excited to finally announce the arrival of our honey pairing box:

Hello Leonora al Fuego!
We’ve got so many delish treats in the shop right now, like this Leonora al Fuego from Spain. Mechanic-turned-cheesemaker Oscar Fernando Marcos González and his wife Patricia opened Quesos Facendera in the Leon region of Spain. Inspired by a traditional cheese from the region called Babia y Laciana and with the help of importer and cheese partner Michele Buster, they innovatively developed this bloomy-rinded goat milk cheese named Leonora. Its unique shape is that of a lingote, by adobe brick used locally to build houses. They additionally partner with local folks with disabilities to create special packaging for this cheese, allowing it to continue growing its soft-ripened rind as it journeys across the Atlantic, so that it arrives in optimal condition. Fudgy and slightly crumbly in its interior, the paste is surrounded by a beautiful creamline that grows in intensity as it ages past its initial 40 days of aging. The rind is made up of fluffy white mold, creating a singular texturally perfect bite. Lush and lemony, with a sour cream tang, Leonora balances its acidity with richness. For goat cheese lovers, it will be a revelation, and they will love the mushroomy notes that develop as it ages further. This version is dusted in spicy Pimentón de la Vera, resulting in a subtle smoky flavor with just the right kick. Just the right amount of elegance and sass blended together! I've lived in Austin my entire life and, hands down, that was one of the coolest things I've done in this city. The cheese was delicious, the pairings were carefully chosen and the whole evening emanated a love of one's work and sharing it with others…You guys hit it out of the park.
